Yes, there are a few of us Nikon users here at Luminous Landscape, although most of the camera specific articles here are about Canon or medium format equipment. I've been using the D100 since July 2002. Basically my workflow is to shoot in RAW mode, make basic adjustments (such as fine tuning white balance or exposure) with Nikon Capture, and then complete the post processing in Photoshop.
Luminous Landscape has lots of tutorials about Photoshop and digital processing that are applicable to all brands and models of digital cameras. For camera specific questions, you might check the forums at photo.net and at digital photography review (although there is a lot of meaningless chatter at the latter website). A good reference source for the D100 is Thom Hogan's D100 guide. There is also some information on his website, http://www.bythom.com.
